Grape Tomato Salad

Let’s face it, tomatoes really only taste like tomatoes when they’re in season. If you live in Edmonton a tomato that rode up on the bus from California in the middle of December isn’t really going to taste like a summer tomato. It may look like a tomato but that’s where it’s going to end, unless however you find Grape Tomatoes. These little babies taste like summer no matter what time of year it is.

Lucky for me I have them growing in my garden this year, so tonight I am all over these little gems!

2 cups (500 mL) grape tomatoes, cut in halves

1 Tbsp. + 1 tsp. (20 mL) extra virgin olive oil or canola oil

1 clove garlic, minced

10 fresh basil leaves, chopped

6 green olives, diced

Pinch of hot pepper flakes

  1.        Mix together all the ingredients in a medium bowl. Let sit for at least 1 hour. Serve over lettuce or eat alone as a vegetable side dish. Can be stored in the fridge for at least 2 days.

 

Makes – 2 cups

Serves – 4 – ½ cup (125 mL) servings

Each serving contains: 70 Calories, 6 g Total fat, 0.5 g Sat Fat, 0 g Trans Fat, 60 mg Sodium, 4 g Carbs, 1 g Fibre,  1 g Protein
