We first ventured down south when my son was six and again when he was eleven. Years later when he was in university, Scott and I went to Disneyland without him, and that’s the trip we discovered Dole Whip™.
For any Dole Whip virgins out there, its a frozen treat that is as close as you can get to Pineapple Nirvana. It’s a cross between soft serve and a full-on magical elixir that cures the heat. One taste and I dare you not to be hooked.
Since that epic discovery, every trip to any Disney world or land and I make a B-line to the Tiki Juice Bar in Adventureland for my next tropical fix. Of course, its not healthy, okay it does have fruit in it, but come on there’s got to be gobs of whipped cream and added sugar in it too, which basically cancels out the pineapple.
I’ve tried to replicate it in my kitchen and this is the closest I’ve ever gotten. Don’t pass out, there’s probiotic kefir in it and not a speck of whipped cream, I Mairlyn-ized it, and its fabulous.
3 cups frozen unsweetened pineapple chunks – see note below
1 cup plain unsweetened 1% kefir, no substitutions
- Put frozen pineapple and kefir into the bowl of a food processor with the blade attachment and pulse until smooth.
- Divide equally between 2 or 4 bowls, and eat your bowl of frozen tart, sweet, slightly effervescent YUM.
Makes 2 really generous servings for two people who really love ice creamy things or 4 smaller ones for the polite people
