Freezing Peaches

My favourite method of preserving fresh peaches is to freeze them.

Right around the beginning of January through until March when I am losing hope that Spring will ever come back to Toronto, I get a container of my frozen peaches out of the freezer, thaw them and serve up the taste of summer.

Here are my easy to follow steps for freezing them..

Choose ripe local peaches.

In a BPA-free freezable container, whisk together 1 cup of orange juice with 1 tsp of Fruit Fresh, this will ensure the peaches don’t brown in the freezer.

Peaches are ready to go into the orange juice and Fruit Fresh.

Peal the peaches, then slice them right into the orange juice.

Crinkle up a piece of wax paper or parchment paper.

Place the paper on top of the peaches so that all of the peaches are covered by the orange juice, and put the lid on.

Cover with crinkled wax paper and the lid.

Label and date them. Sure, today you’re thinking I’ll remember these, but in the middle of winter you don’t want to play “What the heck is this?” when you’re rummaging around your freezer. Freeze for up to 6 months. Thaw in the fridge and serve when they are still a tad icy.

Ready for the freezer, don’t forget to label them.

    1. The wax paper or parchment keeps the peaches submerged so they don’t turn brown – oxidize. It’s all about science at that point!
