An easy to make one bowler, perfect for when you are renovating your kitchen, camping, a student, or when all you really want is a healthy quick and easy dinner.
Takes all of 15 minutes to make
Makes – 6 cups (1.5 L) One serving = 1 ½ cups (310 mL)
Dressing:
¼ cup (60 mL) natural crunchy peanut butter, it has to be natural or it won’t work
¼ cup (60 mL) rice vinegar, lower sodium or sodium free, your choice
2 tbsp (30 mL) lower sodium soy sauce
2 tbsp (30 mL) hot sauce, I used Frank’s hot sauce
Salad:
¼ of a small green or red cabbage, sliced as thinly as you can
1 red pepper, sliced thinly
½ bunch fresh parsley, rinsed, patted dry, and chopped
½ bunch fresh cilantro, rinsed, patted dry, and chopped
½ cup (125 mL) unsalted peanuts, I use locally grown Ontario red skin peanuts
- Make the dressing: in a large bowl whisk together the peanut butter, rice vinegar, soy sauce, and hot sauce
- Add all of the sliced and chopped vegetables to the bowl. Toss. Add peanuts, toss and serve.
