Wonderful Watermelon as seen on Cityline July 13, 2011 (Summer)


Tracy and I cube up some  watermelon and we make two recipes using nature’s answer to a sweet thirst quencher! Once again I am smiling way too hard! Note to self – try not to have so much fun and then you won’t look like you have so many wrinkles!

Watermelon Feta Bruschetta

I adapted this recipe from an original created by Jon “The Mad Chef” Ashton for the National Watermelon Promotion Board

1 tbsp (15 mL) canola or extra virgin olive oil – use canola for a more intense watermelon flavour – although I am a big fan of canola oil I used olive oil for a different flavour profile.
2 cups (500 mL) diced watermelon, drained well
½ cup (125 mL) goat feta cheese, finely crumpled
2 tbsp (30 mL) minced fresh chives
2 tbsp (30 mL) minced fresh mint
4 tsp (20 mL) balsamic vinegar, or to taste


For 16 toasts:
A 24-inch-long loaf baguette, I like a whole grain or multigrain

To make toasts:

Prepare grill or preheat broiler. With a serrated knife cut bread crosswise into ½ -inch (1 cm) thick slices. Arrange bread slices in one layer in a shallow baking pan and bake in middle of oven until golden, about 7-10 minutes. Set aside.


To make Bruschetta:

In a bowl toss together oil, watermelon, feta cheese, chives, mint, and vinegar. Place in a bowl. Serve right away with the toasts on a platter and have guests mound their own mini morsels!




The deliciously refreshing and antioxidant-rich combination of watermelon, pomegranate and green tea provides brides with the energy they need to stay alert, hydrated and refreshed. Serve as is for kids and for the adults serve half and half with Prosecco, champagne, or soda water.


4 cups (1 L) watermelon puree
2 cups (500 mL) 100% pomegranate juice
4 cups (1 L) strong prepared and chilled Green tea
1 cup (250 mL) white grape juice
Ice for serving


Mix ingredients together in a large container and chill. Stir before serving and serve over ice.

Makes about 8 servings.

PER SERVING: about 70 cal, 1g protein, 0g total fat (0g sat fat), 19g carbs, 1g fibre, 0mg chol, 15mg sodium. %RDI: iron 2%, calcium 2%, Vit A 6%, Vit C 20%


The kid friendly version of the watermelon drink is in the glass! Adult version - add Prosecco or according to a dear friend even Gin tastes great!
