Honey Mustard Salad Dressing (all seasonal!)

Okay, you’ve committed to eating 7-10 fruits and veggies everyday and having a salad is a great way to add those raw nutrient packed greens to your diet. You go out and spend money on tons of different types of salad ingredients only to let them turn to slime in the slimer drawer aka the vegetable drawer. What’s a person to do? Go buy a Bag of Greens or a Bin of Greens. Look for Spring Mix, which is an assortment of tender spring greens or look for the Baby Spinach Greens. Both are terrific to eat and have a much longer fridge life, many because they aren’t constantly being sprayed by water. Salad attack? Grab a handful of greens, wash and spin them, pour on one of these terrific dressings and you have lift off.

I created this recipe for Honey Mustard Salad Dressing for a dinner theatre fundraiser at my church. Everyone loved the recipe so much they were coming into the kitchen to write down the recipe. The only problem was the version that was posted on the wall served ninety-two, oh well, hopefully they know math.

Makes – ¼ cup (60 mL)
Serves – four – 1 tbsp (15 mL) per serving

1 tbsp (15 mL) orange juice concentrate
1 tbsp (15 mL) canola oil
1 tbsp. (15 mL) apple cider vinegar
1 tbsp (15 mL) honey
1 tsp (5 mL) Dijon mustard

1. Whisk together in a small bowl. Serve or store in fridge for up to 2 days.

Each 1 tbsp. (15 mL) serving contains
50 Calories, 3.5 g Total fat, 0 g Sat Fat, 0 g Trans Fat, 15 mg Sodium, 7 g CHO, 0 g Fiber, 0 g Protein

What do you mean by orange juice concentrate? Is that frozen orange juice?
