Mairlyn’s Homemade Whole Grain Bulk Pancake Mix

 

Say goodbye to store bought pancake mixes and hello to healthy homemade.

You can make this Whole Grain Bulk Pancake Mix and store it in your fridge for up to 1 month or freezer for up to 3 months. When the pancake urge hits you, measure out milk, add eggs, oil and the correct amount of pancake mix, whisk together, fry and voila you’re eating pancakes in about 12-15 minutes. Serve with some seasonal fruit and breakfast or dinner is ready.

Whole Grain Bulk Pancake Mix

Makes approximately 7 ½ cups dry mix mix depending on settling which makes approximately 42 cooked pancakes

3 cups whole grain barley flour – see below to measure correctly

1 ½ cups skim milk powder – see below

1 ½ cups ground flaxseed

1 cup oat bran

½ cup natural wheat germ

¼ cup ground cinnamon

¼ cup baking powder

  1. Mix all ingredients together in a large bowl with a whisk or a fork until well combined.
  2. Transfer to a resealable container and store in the fridge or freezer.

To make 6 pancakes

Feel free to add berries, mashed banana, grated apple or chocolate chips to the batter. Sprinkle in 1/2 cup of berries, 1/2 mashed banana, 1/2 apple grated, or 2 Tbsp of chocolate chips into the batter in Step 1.

½ cup skim milk or water

1 – omega-3 egg

1 Tbsp canola oil

1 cup Pancake Mix

  1. To make: Whisk together milk, egg and oil in a medium bowl. Add Pancake Mix and whisk together, set aside.
  2. Heat a 12 or 14-inch non-stick skillet over medium heat. Add a tiny amount of canola oil to the skillet to coat. You can use a pastry brush.
  3. When the pan is hot, stir batter once more, pour in ¼ cup of batter into the pan. Most frying pans can fit 3 pancakes at a time.
  4. Pancakes will be ready to flip when the underside is golden brown and there are bubbles on the sides of the pancake. Flip and cook the pancake until the center springs back when pressed. Serve with pure maple syrup, just a little, and enjoy. I’m a fan of jam on pancakes.

To make 12 pancakes

Professional home economist tip:

To measure whole grain flour you need to spoon the flour into a measuring cup and then level off with a flat edge. Whole grain flour settles in a container because it is more dense that regular all purpose flour.

No barley flour? I buy mine at the Bulk Barn in Canada. If your store doesn’t carry it you can substitute whole wheat flour or spelt flour.

Skim milk powder can be found in your grocery store where the canned milk is sold. Don’t eliminate this ingredient; it’s adding protein and calcium to the Pancake Mix. Not a fan of powdered milk? Trust me you won’t be able to tell there’s powdered skim milk in the recipe.
