Apple Chips
A great snack idea using local Ontario apples. Yes, they're available in February at your local grocery store. Hooray!

2 Gala or Idared
1 tbsp (15 mL) sugar
1 tsp (5 mL) cinnamon
Preheat oven to 200°F (100°C)
Thinly slice apples crosswise with a mandolin or sharp knife. Arrange apple slices in a single layer on two parchment-lined rimmed baking sheets.
In small bowl, combine sugar and cinnamon. Sprinkle evenly over apple slices.
Bake in the top and bottom third of the oven until apples are dry and crisp, about 2 hours. Turn off oven and let “chips” cool completely before transferring to a sealed container for up to 3 days.
Makes about 2 cups (500mL) of apples chips.
Per ¼ cup (60 mL) serving: approx. 40 cal, 11 g carbs, 1 g fibre.
Crispy Chicken Fingers
A healthy version of chicken fingers!

1 lb (500 g) skinless, boneless chicken breasts, sliced into strips
2 tbsp (30 mL) sweet chili sauce
1 cup (250 mL) crushed whole grain flakes (I used Nature’s Path)
2 tbsp (30 mL) fresh parsley, diced
Preheat oven to 400°F (200°C).
Dip chicken strips in sweet chili sauce and roll in cereal flakes and parsley until completely coated. Arrange in a single layer on a greased baking sheet.
Bake 20 minutes or until chicken is cooked.
Makes 4 to 6 servings.

Chewy Chocolate Chip Cookies

Baking is a great way to get your kids in the kitchen. Who cares if they make a bit of a mess there are so many life lessons to be learned in the kitchen; having fun, creativity, working together, measuring, dexterity and cleaning up.
½ cup (125 mL) unsalted non hydrogenated margarine
½ cup (125 mL) brown sugar
¼ cup (60 mL) granulated sugar
1 omega-3 egg
1 tsp. (5 mL) pure vanilla extract
1¼ cups (310 mL) whole wheat flour
½ tsp. (2 mL) baking soda
¼ cup (60 mL) chopped dark chocolate 70% or chocolate chips at least 60%
1. Preheat oven to 375°F (190°C). Line a cookie sheet with parchment paper.
2. In a medium bowl cream the non hydrogenated margarine. Beat in both sugars till fluffy.
3. Add the egg and vanilla, beat till fluffy.
4. Stir in the whole wheat flour, baking soda, and the chocolate.
5. Drop by rounded teaspoonful onto the cookie sheet or use a mini scoop or a teaspoon.
6. Bake for 8-10 minutes. Let cool slightly before removing them from the pan. Store in an airtight container for up to 1 week or freeze for up to 2 months.

If you want crispy and sweet, add an extra ¼ cup (60 mL) granulated sugar and an extra ¼ cup (60 mL) whole wheat flour.
To make these cookies whole grain; add 2 tbsp (30 mL) wheat germ when you add the flour.
