Watermelon Soup with Ginger and Mint
Serves - 4

Watermelon is a nutrient dense low calorie summer cooler. Keep yourself hydrated and get the benefits of the antioxidant lycopene all at the same time.

Keep chunks of watermelon in your fridge for thirst quenching snacks or an easy dessert.

This recipe is off www.watermelon.org with a couple of changes. I like to serve it in martini glasses as an appetizer soup.

4 cups (1 L) seedless watermelon chunks and juice
2 Tbsp. (30 mL) fresh lemon juice
2 Tbsp. (30 mL) chopped fresh spearmint
1 Tbsp. (15 mL) sugar
½ cup (125 mL) white wine, try a Riesling
1 ½ -inch (4 cm) piece fresh ginger root
Spearmint sprigs for garnish

1. Blend all ingredients except the ginger in a blender. Pour into a covered container.
2. Grate ginger over a bowl. Pour the ginger liquid into the soup. Stir.
3. Chill for at least 4 hours or up to overnight in the fridge. Stir. Pour into martini glasses and serve garnished with mint sprigs.
