Winter Salad

Spinach Salad
Serves - 2

Trying to fit those fruits and veggies into your day? Everyday? Try this winter salad as a starter, it packs in nearly four servings of your daily fruit and vegetable intake.

Ingredients:
1 large Pink Lady apple, skin on see footnote
1/8 of a red onion, diced
6 cups baby spinach
3 tbsp low fat Caesar salad dressing
2 tbsp chopped walnuts
1 oz blue cheese, crumbled (optional)


Cut apple into quarters, remove core and slice thinly.
Toss apple, diced onion and baby spinach with the salad dressing.
Divide equally between two plates. Sprinkle each plate with walnuts, and top with crumbled blue cheese.


I use Renée’s Naturally Light Caesar Vinaigrette, available in most grocery stores. It is found in the produce section in the cold bunkers. It’s made with canola oil and has a great Caesar flavour as a vinaigrette. For more information on canola oil go to: www.canolainfo.org


Feel free to omit the blue cheese, but I love the way its strong flavour compliments the walnuts.

Look for California walnuts, they really do taste better. I get mine at Costco or my local bulk food store. Avoid pre-packaged chopped walnuts - they tend to taste bitter. Store walnuts in your freezer to maintain freshness. For information on walnuts go to: www.walnuts.org
