Heart Health Gingersnaps
Makes - 3 dozen
A crisp ginger cookie using heart healthy canola oil, a monounsaturated fat which is also a plant source of omega-3 fatty acids. Give yourself a treat that tastes great and is worth the 80 calories per cookie.
½ cup canola oil
1 cup granulated sugar
¼ cup molasses
1 omega-3 egg
1 ¾ cup whole wheat flour
1 tsp. Baking soda
1 tsp. Baking powder
2 tsp. Ground ginger
1 tsp. Ground cinnamon
¼ cup granulated sugar
Preheat oven to 375 F/190 C
Line a cookie sheet with parchment paper.
In a large mixing bowl beat together canola oil and sugar.
Add molasses and egg. Beat till fluffy.
Stir in whole wheat, baking soda, baking powder, ginger and cinnamon till the dough comes together.
Scoop out teaspoonfuls, roll in sugar and lightly press on to cookie sheet.
Bake for 12-15 minutes or until golden brown. Let cool on cookie sheet for 1 minute, remove from parchment paper and let cool on cookie sheet.
Store in air tight container for up to 1 week. Or freeze for up to 3 months.
